Riding High

It's been a week since we went to the beach and I really don't have much to say about it, except that I'd like to go again!
Becky drove on the way home and I handed her a $20 for a $1 toll and she took off without getting my change. I could not talk, I was speechless like in those nightmares where you have something important to say but you can't say it. Thankfully the toll lady yelled at her and got her stopped. Ha.
I thought the lack of a/c would be a pain but on the way home it was so breezy I was wishing to close the windows that don't close without help and they would not go shut and I was ready to get home so we kept going.

Flat Bread Italian Sub

We had this for supper the other night. The kids had a moment of panic when I accidentally sprinkled it with lemon pepper seasoning instead of oregano. We were able to dust and rinse it off of the pepperoni. So if some of the pepperoni looks kind of shiny...

Favorite sandwich of ours lately. My Mom taught me how.

Roll pizza crust dough very thin onto parchment paper.
I stick a flat cookie sheet under it then to transport it to a hot oven.
Like 450 degrees where I had a stone preheating with the oven.
So you flop the pizza dough that is still on the paper, onto the stone and bake for 5 minutes or until it's getting browned.
Then I get it out (again, I slide the flat cookie sheet under the parchment paper) and flip it around and sprinkle with some mozzerella. Just a little.
(flipping it around gives you the nice baked side to hold)
Back in the oven not necessarily on the stone, but that works too. To melt the cheese.
Pull it out and let it cool just a bit.
Now the fun part, on half of it you layer

provolone cheese
Capicola ham
sandwich pepperoni
hard salami
lettuce
tomato
onion
oregano
those neat little yellow banana peppers
black olives
Italian salad dressing

Fold in half, eat it while it's a tad warm yet.

Obviously using what you have and what you like.
One pan uses about 1/2 lb of the meats and provolone each. I would say it feeds 6-7.

Hank's First Birthday

Sugar rush at 9pm last night. Ha ha, we laughed so much.

It's amazing what a year does.
He was pretty grouchy the first 3 months but has since become very easy so it has seemed like a breeze lately.

I kind of like to claim him as a Zimmerman but I think he's a good mix. He looks a lot like Nate's Dad too so... that's what I'd like to see a one year picture of Sam.

May Day May Day

Having made it through one week of summer vacation ... I realize I all ready pulled out a few of the stops. Chalk paint and a library run.
I'm not complaining. We got a lot of work done around here too.

Nate gets his most dreamed of hammock.

Mini golf date one afternoon.

Pizza Friday.
When I made this pizza some cheese fell off and today it smelled really bad when I baked some pie crusts. Too bad because now the whole house smells like dirty oven.

And now it is June all ready. I took the older kids strawberry picking this morning and I forgot to take even one picture.

I got my huge box full of sheet music out of the attic and it has become Hank's favorite toy.
