Mia's Birthday Cake


I know that it would sound like I was bragging if I told you how good this cake was. Ha ha.
It did not pass Mia's inspection without some lettering on it.  That way they could all beg for a piece with letters on it. 

My Very Favorite Chocolate Cake Recipe
1 teaspoon Baking Powder
 2 teaspoons Baking Soda
2 cups Flour
1 pinch Salt
2 cups Sugar
¾ cups Dark Cocoa Powder (sifted)
2 whole Eggs
½ cup Vegetable Oil
1 cup Hot Coffee
1 cup Milk
2 teaspoons Vanilla

Mix dry ingredients and then add eggs, oil, milk, and vanilla. Stir to combine. Add hot coffee and stir until lumps are gone. Pour into greased pan. 
Bake at 350 for 30-35 min or until cake springs back from touch in center. Do not over bake. 

I use this one all the time.  Most often mixed up by hand even. No mixer necessary.

  1. That cake is the best! Grandma Minnie gave me a recipe like it when I got married, except hers uses boiling water instead of coffee. Cute cake, cuke Stuart with a giraffe to sleep with. Tristan sleeps with one too.
