Make the Pumpkin Sourdough Waffles






Sourdough Waffles or Pancakes
(10-12 waffles)

Overnight Sponge

3 c flour white or whole wheat
2 T Sugar or honey or maple syrup
3 c buttermilk
1 ½ c sourdough starter, unfed

Set on counter overnight. Hope no one throws it out.

Waffle or Pancake Batter Regular (or the pumpkin one below) 

·        Overnight sponge
·        3 large eggs
·        1/3 c or 6T melted butter
·        1 tsp salt
·        1 ½ tsp baking soda


Pumpkin Waffle or Pancake Batter

·        Overnight sponge
·        3 large eggs
·        3/4 tsp salt
·        2 T Baking Powder
·        1 T cinnamon
·        ¾ tsp ginger
·        ¾ tsp nutmeg
·        pinch of cloves
·        1 ½ c pumpkin
·        3 T black strap molasses

·        1 T vanilla

  1. These look delicious! What kind of starter do you use? The kind you feed with potato flakes?

    1. Sourdough starter. I feed it with flour and water. I did not start it from scratch.

  2. ok then, I will make the pumpkin waffles!! I actually have a lot of pumpkin puree in the freezer with no ideas, so I will follow your directive :) (and it tickles me to see I have the same waffle iron as you!)
